Oatmeal is a big thing for me this year, apparently; I keep wanting to write down the different types of oatmeal that I create every time a newly fresh ingredient comes into season. So here's my oatmeal for strawberries. The quantities are all approximations, edit them as you choose, or just revert to using handfuls and spoonfuls rather than measurements, as I do.
Regardless of how you like to cook, I hope this inspires you to eat strawberries ;)
1/3 cup of oats, or two packets of plain instant oatmeal
1/4 cup of raisins
1/4 cup lightly chopped pecans
1 tbs flax seeds
1 tbs powdered milk
1 tbs butter
a pinch of salt
a nice handful of fresh strawberries
a dob of both maple syrup and cream to finish
Combine the oats, raisins, pecans, flax seeds, powdered milk, cream, butter, and salt in a medium saucepan. Just barely cover with water and set on the stove. Cook on low heat, stirring until a satisfying consistency is reached.
While the oatmeal is cooking, core and chop the strawberries into bite sized pieces.
When the oatmeal is done, pour it into a bowl and cover with the strawberries. Drizzle a bit of maple syrup and cream over the berries. Stir together and enjoy!
