The most amazing thing about chickens is their ability to lay eggs year round. Really, they are one of only a few types of bird that lays eggs all year long and that is such a wonderful thing. So much locally produced food is a seriously seasonal thing, but if you keep chickens then you always have a source of fresh protein and fat coming at you to enjoy through all the cold winter months.
I don't know what's been up with my brain of late, but all I want to cook lately is popcorn (shut up) and eggy stir-fry. It's so yummy. Literally, the first time I came up with it I had it for dinner, then I proceeded to eat only it the entire next day. That was about two weeks ago, and my enjoyment of the dish has only lessened by a few degrees.
I'm starting to think there's something wrong with me.
2 tbs vegetable oil or goose grease
1 tsp of hot sauce or chilli flakes
3/4 cup of cooked rice
a pinch of salt
a daub of soy sauce
In a wok or frying pan heat the oil. Add the eggs and chilli flakes before scrambling. Constantly stir the eggs so that there are no huge chunks, once the eggs reach an almost paste-like state add the rice and combine. Add the salt and soy sauce, and a little butter if you want some extra flavour. Plate and enjoy!
